Cucumber Flower
This one takes a little practice to make it come out even, but is well worth the effort. The first time you do it you might want to try it during the late summer when cucumbers are readily available and cheap.
Select a well-rounded, straight cucumber. Cut a 1-1/2 inch piece off each end of the cucumber. Depending on the length of the vegetable and the desired size of the end resulting flower, cut cucumber into 2 or 3 lengths.
Cut a thin scallop shape to form the first petal. Gauging the size of the first cut, carefully cut 4 or 5 more petals around the cucumber. Make a cross cut about 3/4 of an inch at the top of the cucumber and carefully pull out the top center. Then use the melon ball scoop to remove the inside of the flower. Be careful not to cut clear through to the bottom, as you want to leave a floor.
Drop the finished flower into a bowl of ice water to allow the petals to open.
When ready to use, remove from water and dry flower. Fill it with pate, spreads for crackers or to hold condiments such as mustard, mayonnaise or tartar sauce.
