Cucumber Boat

You can either use the cucumber or a very large zucchini to create this boat. The smaller boat can hold condiments for a barbecued hamburger feed, tartar sauce for fish or sour cream for tacos. The larger boat can hold that same sour cream for baked potatoes or with some special handling (step 4), a hot side dish of vegetables or sauces.

  1. Let's start with a boat for cold dishes. Select a pretty good- sized cucumber or zucchini. Cut a thin slice down the side of the vegetable to make the bottom of the boat flat. Make a 1-inch cut at either end of the vegetable slightly higher than the center since you want the "bowl" to be slightly deeper and you will discard the top. If you plan to use both halves to make two boats, you may center the cut.
  2. Begin at the end of the cucumber with the Food Decorator Tool and push the point of the tool straight through the vegetable in line with the 1-inch cut. This will create a "V" cut through the vegetable. Make another cut in the same way right next to the first cut making sure to connect each new cut.
  3. Separate the two halves carefully so you don't break the "V". With the melon ball scoop, remove the seeds and pulp of the cucumber or zucchini to form the boat. It is now ready for cold condiments. To make it for hot items, go to step 4.
  4. Just prior to serving, cook the completed boat in lightly salted water just long enough to soften the shell. Fill the boat with cooked vegetables or cream sauce.
